The Vegan Girl's Guide to Life

I've been a busy beaver lately, but that hasn't stopped me from recipe testing for three peeps! I'm helping out the lovely and punktastic Melisser of The Urban Housewife with her newest endeavor, The Vegan Girl's Guide to Life, which will feature not only recipes and adorable illustrations by Michelle of MyZoetrope, but also advice and information on going vegan and staying vegan, as well as activism, vegan fashion, and lots of other neat stuff!

Anyhoodles, here are some pics of what I've been making. I love the recipes for this book because they are all quick and easy, but super super tasty! They also don't require a lot of specialty ingredients, which, while fun, can be daunting for new vegans.

Pasta with Asparagus in Lemon Cream Sauce


We've made this twice now, and ZOMG is it delicious. Plus you can really play with the recipe and throw in any other veggies skulking about in your produce drawer.

2 Bean Confetti Hash


Another dish we've made multiple times. SO GOOD. Beans + taters + veg + my addition of Yumm! Sauce = GET IN MAH BELLEH.

Yum! Yay! Off-hand, do you know if anyone who isn't Amazon will sell Melisser's book? (Amazon = gay haters. Erica = long grudge holder.)

The asparagus pasta was so amazing! I hope I'll be able to test the tempeh recipe soon!
